A Champagne Affair at A Taste of Coolum


Hyatt Regency Coolum has created the ultimate escape for Champagne lovers, combining luxury accommodation with a decadent five-course dinner hosted by Australia’s Champagne supremo Bernadette O’Shea.

One of the highlights of the resort’s annual gourmet celebration A Taste of Coolum, the ‘Bountiful Brilliant Bubbles’ dinner on Friday June 24 will offer a sparkling line-up from some of the greatest Champagne houses in France.

Vintages from Ruinart, Mumm, Louis Roederer, Billecart-Salmon and Philipponnat will be matched to a five-course degustation dinner created by Chef de Cuisine Gareth Collins at the resort’s signature restaurant Eliza’s.

The dinner costs $295 per person including five courses and Champagnes.

Accommodation options include:

  • King Rooms from $225 per night for two people, including continental breakfast and entry to The Spa.
  • Ambassador Villas from $705 per night for up to four people in two bedrooms, including continental breakfast, private tennis court, pool, entry to The Spa and a copy of Bernadette O’Shea’s book Champagne and Chandeliers.

Held each year at Hyatt Regency Coolum, A Taste of Coolum attracts dozens of the country’s top winemakers and hundreds of food and wine lovers for a succession of culinary events.

This year’s Taste – from Friday June 24 to Sunday June 26 – will include A Night in Italy in the resort’s village square, a Tri-Nations Dinner hosted by winemaker Geoff Merrill, and the annual Chefs Alfresco wine-tasting afternoon involving more than 40 Australian producers.

Bernadette O’Shea is a Brisbane-based author, educator and Champagne consultant celebrated for her exceptional palate and knowledge. She holds the prestigious medal Chevalier de l’Ordre du Mérite Agricole awarded by the French Government for services to the Champagne industry, along with numerous other French and Australian honours.
