Inspired by French-label liquor, these brand new-flavours include Pear & Sauternes, Calvados and St Germain Elderflower ($2.50/each) – as featured in the July 2011 French Edition of Gourmet Traveller. Created by Baroque’s multi-award winning head patisser Jean-Michel Raynaud, these delicate sweet treats use premium quality liqueurs and represent a celebration of French confectionary.
The Sauternes macaron is made using a rich, honeyed 2007 Chateau Roumieu-Lacoste Sauternes, a luscious flavour which works in harmony with the pear. The St Germain Elderflower liqueur used is procured from wild elderflower blossoms picked at the foot of the French Alps each Spring. The liqueur gives the macarons a sweet, slightly floral and refreshing flavour. The Calvados, an apple brandy liqueur from the French region of Basse-Normandie, is a Christian Drouin V.S.O.P. Brandy – which imbues the macaron with notes of apple and pear.
